Earlier this year The Groovy Food Company launched an Organic Coconut Flour and the Palm PR team thought what better way to help pitch the product to journalists than to arrange an office Bake Off so we can all trial the product for ourselves! All great ideas involve cake and healthy competition right?

Revealing the team’s true competitive colours, The Groovy Bake Off saw two to three bakers deliver their coconut flour masterpieces each week over a four week period. Each cake was critiqued over its creativeness, taste, texture and look, each category gaining a mark out of ten – this overall score was then divided by the number of team members in on the day to keep it as fair as possible (did we mention we take competition seriously). The main objectives for the Bake Off was to create something as healthy as possible, and of course the more Groovy Food Company products used the better.

We had 10 entries in total, and everyone’s baked goods not only looked great but tasted even better. The team was treated to an array of goodies ranging from chocolate chip cookies, lemon drizzle cake, banana bread and chocolate cake. Each coconutty treat was devoured during Palm’s weekly Monday morning meeting over a cup of tea. Monday mornings are no longer the same now the bake off is over.

The results are in and the winner of Palm PR’s Groovy Coconut Flour Bake Off was the Banana and Honey Sticky Buns! In close second was the Lemon Drizzle Cake and joint third was the White Chocolate and Pecan Cookies and the Blueberry & Orange Cake.

The Palm PR team had a great time experimenting with The Groovy Food Company’s Organic Coconut Flour and it helped all of us understand the product a little more and how it works. If you haven’t had a go at using the Coconut Flour yet, we would highly recommend it. Make sure you find a coconut flour-specific recipe, as it cannot be swapped 1:1 for another flour.
