The Pastry team at The Landmark, Head Pastry Chef, Mauro Di Lieto and Pastry Sous Chef, Daniel Schevenels, have been crowned winners of Channel 4’s Bake Off: The Professionals 2023.

The winners impressed judges, Benoit Blin and Cherish Finden, in the final with their creations, which included a Chocolate and salted caramel Swiss roll with banana cremaux and peanut butter. The dessert had rave reviews, with Cherish stating, “in this dessert, there is love in every detail.” The pairing was simple and perfectly balanced, boasting a soft and moist sponge with complementary flavours.
